Making cottage cheese is a straightforward process that can be done at home with just a few simple ingredients. Begin with a quart of milk–whole milk will yield a creamier texture, but you can use low-fat or skim milk if you prefer. Heat the milk gently in a saucepan until it reaches around 120°F (49°C), taking care not to let it boil. This step is essential for curd formation.

Once the milk is heated, gradually add an acid. You can use white vinegar or fresh lemon juice, starting with about 3 tablespoons. Stir gently to combine, then cover the pot and let it sit for about 5-10 minutes. During this time, the milk will curdle, forming small curds and whey separated.
